Our Best Bites cookbook

If you are a regular reader of my blog at all, I think it is no big secret that I thoroughly enjoy the Our Best Bites cooking blog... ok, so I'm a mega-fan. Sue me! But seriously, these two ladies had me hooked from the moment I laid eyes on their blog! I still remember how I stumbled upon it... My friend, Tiffany, had made a recipe of theirs and posted a link on her blog. Being bored and in a blog-stalkish mood I decided to check it out. Life-changing, I tell ya! Ok, maybe not quite that dramatic but I remember spending a good chunk of time browsing their site and checking it often until I finally figured out their regular M/W/F posting pattern. And I'm not going to lie, Monday, Wednesday and Friday mornings I pour my cereal and usually go straight to their blog to see what new yummy I will be drooling into my bowl over! Now, I didn't realize this at the time, but their blog was still fairly new when I discovered it and even though I haven't been a fan "from the beginning" I like to think I've been with them much of the way and was thrilled when they announced last year they were publishing a cookbook!!

Fast forward to March 2011 and their cookbook is now out and {thanks to grandma Sandy} I have my own copy in my hot little hand! LOVE IT!! Pictures on every page. Favorite recipes from the blog... New, non-blog recipes... Tutorials... I am seriously thinking of cooking my way through it a la the movie Julie & Julia, though I won't be blogging that and {no offense to Kate and Sara} don't think it would have quite the same story. But still...

Also, there has been a rumor that they will be making an appearance in Seattle sometime in April and you'd better bet that I will make the drive to have my copy signed! :)

Culinary Adventure: Crepes

First of all, I apologize for the lack of posts... again. I've been having a bit of writer's block. I've still got a handful of posts that need to be written, but I'm missing something for each one... A picture on someone else's camera that I'm hoping she'll email to me or pictures that I still need to take or creative, witty writing. I seriously don't know how the "pros" can write a new post, sometimes multiple posts, every day! Anyway. I digress.

Tonight was a cooking first for me. I made crepes. All day long I hadn't thought much about dinner because I knew we had a ton of yummy leftover spaghetti {with homemade sauce... Remind me to share the recipe some time. It's loaded with tons of fresh veggies and my Ethan gobbles it right up!} and I figured I'd just whip up a salad to go with it. Imagine my dismay when Sean tells me he had it for lunch! Dang it all! So I looked over my dinner ideas list and what we had on hand and was uninspired. So, I decided to try something completely new. Crepes.

First order of business: a phone call to my mom {aka the Crepe Queen}! I had to get the facts... Which recipe she uses. How much she makes. How she cooks them. And any advice and tips she had for a newbie. Can you believe after almost 6 years of marriage I had never once made crepes?! Lame, I know. And it's not like I was afraid of attempting them. For whatever reason, in my 25+ years of existence I had never, not even once, made a crepe.

So I got to work and whipped up the batter, heated my pans, added a little butter and poured the batter for my first one. It. was. a. dud. A big-fat-pile-of-crepe-batter DUD. Ugh. I put it on the plate and tried again.... I lost. Zero for two and my confidence was quickly fading. So I turned to the internet {I almost called mom again, but didn't want to resort to that just yet} and went straight to Our Best Bites because I knew there had been a crepe tutorial not too long ago {ok, so it was last June, but I swear it was "just the other day"!}. Now, I didn't use their recipe, but I may next time. My best advice for crepe newbies is to understand that by the time you are ready to flip the crepe, it's already pretty much cooked through and shouldn't be runny at all. You are basically just browning the other side. Wish I would've realized this for my first two attempts! With renewed confidence I made attempt #3 and it was... a success!! After a couple more, I got both pans going and in no time had a nice, hot stack of crepes just waiting to be gobbled up by my hungry family. {Ethan had already told me numerous times that he was "staaaaarving"! I worry this kid is gonna eat us out of house and home when he gets older!}

Oh, and what became of my first two failed attempts? Well, I destroyed the evidence, of course! Just because they were unsitely does not mean they weren't tasty!

I called my boys to dinner and after a little coaxing, Ethan decided he liked his best plain, rolled up and dipped in powdered sugar. We had a variety of other fillers, though: homemade strawberry freezer jam, blueberry syrup from Pike Place Market and whipped cream. Sean even tried it with maple syrup, but I prefer the jam and powdered sugar route. {And no, the tulip stems on the right side of the picture were not part of the topping/filling selection!}

These Make My Day


My grandparents Toftdahl were up in Vancouver a couple weekends ago for a funeral but they came by to visit for a couple hours and it was great to see them! And they came bearing gifts... a nice, big bouquet of fresh daffodils - one of my favorite flowers! How can you not love the bright, sunny vibe they put off?? I put them in a Mason jar and tied the yellow ribbon on - LOVE it! There was just something so country and homey seeing those daffodils in a Mason jar instead some fancy-schmancy vase. And I kept them on our coffee table in the living room so that I could admire them from my death bed on the couch - that was the week I was sick... again. Round three. Ugh. But I'm better now and wishing I had a fresh bouquet of daffodils!

Recent Craftiness

Alright, so really, by "recent craftiness" I mean Valentine crafts. I'll go in order from least favorite to my favorite.

First up, my Valentine lanterns. These are based off of the same idea as the Halloween lanterns I did back in October {seen in this post with instructions taken from Our Best Bites}.Originally, they started out hot pink, but that shade of pink just didn't go well with my other decorations and the beauty of mod podge is that you just put your jar in hot water and everything peels right off and you can start anew.

See? I didn't even like it enough to bother taking a decent "before" picture!

I like them... but I still think they're missing something. I love the vinyl lettering {thanks to Jenn for doing it for me!} and I love the red. I'm not wild about the hearts, but at that point I had made the effort to cut them all out of another sheet of tissue paper that I wasn't going to waste all that work, plus they're kinda subtle. I don't know... maybe some raffia or something tied around the top?

Next up, the Hug-N-Kisses blocks. I made these with a ladies craft group from church. This is how they're supposed to look:
LOVE the font for the vinyl lettering. So I got my blocks all made and it just seemed like they were missing... something {apparently I have that problem a lot}. So I roughed up the edges a little and swapped out the "N" for an "&" and then I couldn't decide where to put the little heart {from inside the "i" in "Kisses"} but I finally found a spot I liked - tucked inside the "U". {Click on the picture to better see the distressing on the edges.} As a final touch, rather than centering the blocks, like in the first picture, I arranged them as seen below and added the white foam glitter hearts {four pack found in the dollar section at Target}. I think the hearts help complete this little decoration and really make it my own.And, of course, it looks even better next to a full jar of red, pink and white M&M's!
Final project: Valentine Rosette wreath
Yet another idea I stole from Our Best Bites {get the tutorial here}! It was fairly cheap and easy, but time consuming! Just a foam wreath from the craft store, felt and a glue gun are needed and felt is pretty cheap. I went with white and three different shades of pink. Each and every one of those rosettes had to be cut out in a spiral shape and then rolled up. It's a good project to do while you're watching a movie. Turn on your favorite chick flick and start cutting and rolling! Although... it may take two chick flicks. Originally, I was just going to do enough rosettes to cover the outside and along the inside, but leave the back bare, but once I got gluing the dang things on, there was so little left in the back that I just decided to make some more and cover the whole thing.
Sean snapped this picture while I was napping on the couch. I didn't even know the little booger had gotten ahold of it! This was mid-way through - before I decided to cover the whole wreath.

And here's the finished product! I have to say, gluing them into place was a lot harder than it looks. I took great care to have repeat colors touch only occasionally and even with four different colors this was difficult task!

That's it for now! I don't decorate for St. Patrick's Day, but I'm realizing I have very few Spring/Easter decorations so hopefully there are more cute crafts in my {very} near future! Feel free to share some ideas or links to craft blogs in the comments.

Scenes from St. Paddy's day

Nothing too exciting at our house for St. Patrick's Day. We all wore green. Ethan and I ate Lucky Charms for breakfast... not so much because it was St. Patrick's Day, just because we like it and it happened to be in the cupboard.

I explained to Ethan a few of the things associated with the holiday - green, shamrocks, rainbows, pots of gold, etc. and then he decorated his own shamrock. Yeah, we keep it pretty simple!

And finally, while Sean taught his vocal lesson and went to mutual, I made a batch of brownies and then topped them with green frosting and sprinkles.
{And, yes, it was just as moist and fudgy as it looks - possibly my new favorite brownie recipe!}

February Recap

So, if you were disappointed by the severe lack of pictures in the November, December and January Recap posts, I'm hoping February's will make up for it! There's still not a whole lot to cover, but lots of never-before-seen pictures that will {hopefully} keep the grandparents happy for a while. ;) Let's get started!

* Date-night-movie-of-the-month: Academy Award Best Picture NomineeAwesome movie!! Especially if you love a good western. I saw the original {a John Wayne classic - he won his only Oscar for his roll as Rooster Cogburn} and this lived up to it. Hailee Steinfield plays the young girl in the movie and she held her own with her big-name co-stars.

* Zoo trip: Ethan and I lucked out with another beautiful day at the zoo for $4 Tuesday. We got there just after it opened and the weather was perfect - sunny and chilly {aka just cold enough to keep the crowds small}. We had a great time, just the two of us, walking around and checking out the animals. So many of the animals were out and active {see pictures below} and we also got to see the thunderstorm simulated in the croc tank. I didn't even know they did this and it kinda freaked Ethan out. Actually, it kinda freaked me out! It made the exhibit much more real - a little too real! But still cool. We didn't stick around for long. Here's the pics from the rest of the day, though.

* Cookie baking w/ Maddy: I watched Maddy one day and after lunch I got two little helpers in the kitchen. We made my little cookie concoction with a chocolate cookie base and those new little mini unwrapped Reese's PB cups. Yummy! {And do you even need to ask where the chocolate cookie recipe came from?!? It's based off of the Cadbury Egg cookie recipe, but with PB cups instead of the Cadbury Eggs. Although, I just bought some today at Target, so I'm sure a batch of those will be coming soon!}

They were good little helpers and even better taste testers!

They didn't want PB cups in their cookies, so we did a batch without and they decorated them with Valentine M&M's.

TV Junkie

Let me just say right up front, there will be no pictures in those post. I have no cute random Ethan pictures of the past week and no desire to have my red-nosed, sleep-deprived eyes and make-up free face to be photographed. And don't even get me started on my hair. Frizz city, folks! You may recall from my last post that I got a completely random and totally over-powering bout of stomach flu or something similar last Sunday. By Tuesday I was good-to-go and then by Friday? By Friday I had a sore throat, cough and the beginning of some soon-to-be massive sinus issues. What the...? Really? That's right. Sick again. For the third time in less than 3 weeks. Saturday and Sunday were much, much worse. I missed church again and Sean had to sub for me. I don't know that I've ever had to miss back-to-back Sundays at church because I was sick. Traveling, yes. But not because I got sick with TWO different things (cold? flu? virus?). So over these past few weeks, when I've been down for the count and trying to rest up, there has been a lot of TV watching in our house. As much as I hate to admit it, when I'm sick, the TV is on most of the morning. It's pretty much the only way I can get any rest and it keeps Ethan entertained. Don't judge. In fact, please tell me I'm not the only mom who resorts to this! Anyway, when it's not Ethan watching something, then it's usually me. I caught up on the entire last season of Biggest Loser, several missed episodes of What Not To Wear and have watched more movies than I can count {as a side note, we have a year of free Starz movie channels since we've been with the same satellite company for so many years - I have been taking advantage of watching movies that I missed from '09 and '10 that I can record and watch commercial-free}. And then there was last night. When my insomnia hit. Luckily I had already decided to sleep on the couch so as not to disturb Sean because I slept so horrible on Saturday night. I tried to sleep, I really did. But my throat hurt, one nostril was plugged and I was either too hot or too cold or had to go to the bathroom because I have been really, really good about drinking lots of fluids. So I finally decided not to fight it, moved to the recliner and turned on the TV. I watched part of an infomercial for the Ahhh Bra and part of an infomercial for the NuWave oven and then decided to just see what was on the DVR. Four episodes of The Vampire Diaries later and the sinus pressure was finally starting to ease up. By this time it was about 5am and regular TV was starting to come back on, so I drifted in and out of sleep with A Baby Story on in the background.

Anyway, I am SO READY to be better! And to be a wife and mom again!! Sean has been really good about taking care of me and having to deal with Ethan. I haven't cooked a real meal in weeks and am just grateful that laundry was caught up before this last round of blech hit. I promise I really do have more interesting blog posts in the works including February's Recap (with lots of pictures!), some recent craftiness and a girls weekend in Seattle. For now, though, I'm going back to the recliner with my water bottle, blanket and, of course, the remote.

Out of Commission

I have to apologize for my absence this past week. I wish I could tell you I'd been up to something super exciting and it had been consuming all my time but... I haven't. Just life. Just mundane. We spent so much of February with at least one person in the house sick, that a couple of things piled up - like the laundry. So I spent the bulk of a day last week catching up. Friday, Ethan and I were long overdue for getting out of the house, so we met up with some new friends in the ward for a playdate at the nearby McD's. We picked up another mom and her two kids and I had to get a picture of the three kiddos and their carseats squeezed into the back of the Explorer. You can't really see him, but the baby is on the left. Oh, and Ethan is showing off his latest car obsession. That evening our little family also went to an elementary school Bingo fundraiser {very fun!}. Saturday was ward temple day, so we went with another couple and went to an early session. And then there was Sunday.... Oh my, dare I say, possibly the worst Sunday ever. I woke up slightly nauseated and after getting Ethan settled with some breakfast, camped out on the couch. A spot I was quite familiar with having just recovered from a nasty, week-long sinus-cold-thing. I spent most of the morning there and that's where I was when Sean left to help do fast offerings. By the time he got home, I had migrated to the recliner with my blanket and had added a bowl to my lap... just in case. So I stayed home. And Sean subbed for me in my Primary class. And it was a good thing, because, as if on cue, right at 2:20pm {about the time that my class would be starting} the bowl on my lap {"just in case"} was put to good use. And it was downhill from there. No appetite. No energy. No desire to even attempt to get fluids in my body. Even though I knew I was already getting dehydrated and shaky. When my boys got home at about 5pm I still hadn't eaten and had about 8oz of powerade in me for the day. I attempted a trip to the kitchen for a small bowl of bland cereal. The cereal was poured. The milk was retrieved from the fridge. I stared into the bowl and felt like I was going to collapse. So I stumbled back to the recliner and then stared into my other bowl {the one that was "just in case"} and promptly emptied my stomach of the 8oz of Powerade in my system. And then Ethan pointed out that I was throwing up. And that it was gross. And that it was blue {Mountain Berry Blast Powerade blue, to clarify}. And then he asked me if I was going to die. And then his Daddy told him to "leave mommy alone!" I camped out on the recliner for the next hour and a half or so and managed to get down {and keep down} 2 small bowls of Special K {the absolute only thing in the whole house that sounded remotely appetizing}. And then I relocated to the bed and slept. Sometime in the evening I mustered up all the strength I had to take a quick shower and put on fresh jammies. It took all my energy. I was back on the bed the second I was dressed, which meant I still had sopping wet, tangled hair. And sometime in there my mom called and upon hearing I was sick with stomach issues asked if I wanted a hot dog. And some other random foods meant to tease and induce a gag reflex. Not funny. Cruel, cruel mommy. And then I told her if I got any worse I would make her drive the 2 hours to get to our house so she could take care of Ethan {forget that I have awesome friends up here and already had offers to take Ethan off my hands if needs be on Monday!} while Sean was at work. I got lots more sympathy after that. {You know, not that my mom doesn't want to come visit us!}

Monday morning I was up at about 4:30am. A day full of cat-naps and stomach illness will throw you off your schedule like that. And I was feeling much better. Not 100%. I still spent much of the day in the recliner. And our TV was on way too much {which I hated and Ethan loved}. But I was able to eat a little bit more. And I made an extra effort to drink lots of fluids in an effort to make up for Sunday.

And because of all this, we had to cancel TWO dinner dates. Sunday we had been invited over for dinner with the same new friends {they were super-nice and brought us our meal}. Monday we were supposed to feed the missionaries {and I had a super-yummy menu planned}. :(

By Tuesday {yesterday} I was basically back to normal {only my appetite was still kinda low}. It was a good thing, too, because I was in charge of the cupcakes for a baby shower that night! I got them done, though. Two dozen lemon cupcakes topped with lemony-buttercream-frosting-goodness! Recipe, of course, courtesy of Our Best Bites. And I also made 30 open-face chicken salad sandwich halves to contribute. It was a fun baby shower and miss Emily Jane is due to make her appearance before the end of the month. Maybe even this week since the little princess is breach. She is kiddo number 5 for the family and breaks the tie between boys and girls!

So, anyway, I apologize for my absence. And I promise I already have a couple new posts in the works - which I better get crackin' on if I want to make my blogging goal this month! Hope your family hasn't been plagued with as much sickness as we have. Speaking of which, Ethan has been sneezing all morning and feels a little warm. I sure hope we're not headed toward another round of Kleenex, juice cup refills and temp checks... Fingers crossed!

Imagination Movers Surprise!!

As much as I'd like to take credit for our evening last night as though I'd had this surprise for Ethan all planned out for months and months.... I didn't. I got a generic email yesterday afternoon from the Portland Center for Performing Arts about upcoming events and didn't read it until about 5:15pm. Normally I just skim through it and then delete the email, if I even read it at all. Well, something just happened to catch my eye - 1/2 price tickets to Imagination Movers. Sweet! I love a good deal. Oh, wait... it's for tonight. Just when I was about to delete the email, I decided to run it by Sean. Long story short, we got Ethan ready and decided it was worth a shot. Of course, you could no longer by tickets online, so we had to cross our fingers that there were still tickets available at the box office. We got into downtown Portland at about 6:30pm and Sean dropped me off while he wen to find parking. Our tickets ended up being $49.50 for ALL 3! That's only $16.50 a ticket! And they were excellent seats - row L of the center section!! So, all this time we had not told Ethan where we were going - just that we had a surprise for him. As we got closer to the theater, I got nervous we wouldn't get tickets and had warned Ethan that the surprise was last minute and we may not be able to get in. I met up with Sean and Ethan after they parked the car and then we told Ethan the surprise - he was so excited!!We had about 15 minutes before the show started, so we let Ethan go ahead and take a picture in front of the backdrop they had set up. It was actually a pretty cool deal. They had kids-size Imagination Movers coveralls if they wanted to wear them and then they let the parents take the picture on a digital camera. When the show was over, you could pick up the pictures from a table. And the best part? It was free! They also gave Ethan a sticker and package of silly bandz.Alright, time for the show!! The opening act was Choo-Choo Soul w/ Genevieve and DC and as soon as they came out, Ethan was hooked. Huge grin on his face! He was so excited to see them in person! They did a great job of getting the kids excited and the crowd moving and singing along. Next up... IMAGINATION MOVERS!! Sean and I liked that the show was more of a concert - we thought it was going to be more like an episode of the show. They did a bunch of the favorites from the show and were good about coming down the aisles and really interacting with the kids.
Next up was a visit from Nina! She taught the kids a hula and that's when Ethan actually started to dance and participate a little more - he'd been a bit shy before.

Warehouse Mouse came out next, then there was another "special guest" and then the finale, complete with confetti!





We had a great time!! The actual show was about an hour long, not including 15 minutes with Choo-Choo Soul and then a 15 minute "encore" set with some classic rock and pop songs - so an hour and a half. And, they said we were one of the best crowds they'd had yet - which was especially impressive for a Tuesday night! Ha ha!!After we picked up our picture in the lobby, guess who came out for a little meet-n-greet?! Genevieve and DC from Choo Choo Soul!
Yeah, this pretty much sealed the deal as Sean and I being awesome parents in our little Ethan's eyes. Ha ha! We had a great night! :)

I have to say, I have much more respect for them after seeing the show and hearing a little more of their story (check out their site) and knowing, now, that they started out as ordinary guys with jobs and families and that they are all friends - not actors. This is the 2011 tour, so it just started. In fact, for those in the "area" they are in Eugene tonight and then in Seattle on Friday.
